Mexican on a Diet?


The key to eating healthier is to eat a variety of colors. A few posts ago I showed you my grocery cart. It's full of all the colors of the rainbow. Tonight I used some of these colors to make my version of taco salad. Total calories 633. We have red pepper, green pepper, serrano pepper, (16 cal)  lettuce greens, (70 cal)  1/2 avocado (150 cal), 1/4 cup of Veggie Shred Cheddar cheese (70 cal), 10 shrimp (100 cal), black beans (227 cal) My seasoning doesn't include wheat so it's all spices. Now some people would say 600 calories but what you have to realize is that just a year ago I could eat a big mac (500 cal) and a large fries (500 cal) and soda and still not be full so in another hour I'd be hitting the potato chip bag. Rounding out my caloric intake at about 1500 cal so to me a 600 cal dinner that leaves me satisified for the entire evening is a HUGE improvement.

That's the other key - just because your skinny friends can eat a pea and be full, you can't do that yet. It took years to get that weight on us and now it's going to take some time to get it off of us. It's a marathon journey not a sprint. Reducing my caloric intake by half it a huge accomplishment for me and I'm celebrating in style! By going to a Yoga class this morning!
